Mushroom picking night
Last night I went out in the forest to see if there where any mushrooms. We thought there would t be many as its late season but we found loads. Went out on the quad bike :)

My paleo bounty marsipan
Recipe one portion:
3/4 cup of almond meal
2 tbs of desiccated coconut
2 tbs of cocoa powder
(1/2 tbs flaxseeds optional)
(Sweetener, honey for example. I don't use any sweetener optional)
Coconut cream
Mix the dry ingredients together and now ad the coconut cream (and honey if you wish) until the mixture becomes a thick rollable mass, you will not need much. Shape as you like and then it's finished :D

Sweet sweet weekend
Beautiful weekends! That's when I get to relax and have fun nowadays as the weekdays are all school school school. I went shopping on saturday in Grebbestad and bought some new hiking clothes, they are so nice will show them later this week. After the shopping Me and my friend went to dinner at a place called Kajutan. Since I'm on the paleo diet I do have issues finding good restaurants that have food that I can eat. No matter where I go I always have to scan the menu quickly to see if there is anything eatable or if it can be modified to my liking. Sometimes the staff is helpful and will gladly change the dish for me but sometimes it's just a pain in the ***. But at Kajutan the staff where so nice and I got a hand peeled shrimp salad with olive oil instead of Rhode Island sauce with no bread and butter and it was so good. Love when it's that simple to dine out ;) After dinner we went for a walk along the harbour really needed that walk as I was bloated from eating so much hahah ;)

Recipe for my breakfast cauliflower porridge
Whilst beeing on the paleo diet it can get pretty tiresome eating only eggs and bacon for breakfast. Paleo and low carb people know what I'm talking about. So I made my own recipe for rice porridge or pudding that tastes really good and gives the same texture and creaminess without the carbs ;) I'm still having eggs as well as I need the protein.
1 cup of cauliflower (riced, as in chopped in food processor)
1/2 cup of almond flour
Coconut cream as desired or until reached thickness of preference
Bring to the boil and turn the stove of. Just let the porridge summer in the heat that's left and then it's finished. Serve with cinnamon or other spices.

I love hiking and the west coast of Sweden
Yesterday i went for a hike with a mate :) I go there fairly often as i think its one of the most beautiful places near my town. After the hike we went to a small beach near Lysekil and did some exploring. I love the sea :) The smell of salty water and the sound of seagulls are so refreshing. So happy to live on the west coast. We found an oyster at the beach thought that where pretty cool. Im going for another hike in a bit, havent decided where to go yet though.

Look what i have made :) ginger bread cookies
I am such a good girl making paleo cookies with no sugar. Not that they where very complicated to make haha probably the easiest ones I have ever done. Just mixed almond flour with coconut fat and ginger bread seasoning. Then put it in the oven for like 20 min and voila! Ginger bread tasting almond cookies :) na na na gotta stay healthy and fit and that means staying away from that vicious sugar ;) they make a great snack

On my way to school and have just done my school make up (foundation, mascara, lip stick are all essential or you get told off haha). I have a full day ofanatomy today which I find really interesting. Bring this day on :)

Haven't been updating for a while but I have been sick and pretty busy with school. Still really sick my throat is so sore :( Anyway I'm back now. Just sat watching my favourite tv show Det okända which is about paranormal activity in people's homes. :)

Yummy in My tummy cheese cake and crumble
I went for a walk with my dear friend Petra tonight, think we went nearly 7km. We aimed to go thru the dark forest on the way home in the dark like we used to when we where kids. The path was completely overgrown when we got there though hehe so we went back shit scared (we like to get scared though). There was also a full moon tonight. Home at last I had roast chicken with snow peas yummy. For dessert I had this lovely paleo cheesecake with vanilla bean and lemon coconut cream and cocoa and almond crumble. Next weekend I think I gonna remake it but with strawberries instead. Love love :)
What i do on a Friday night when I'm bored
I know Friday nights are not supposed o be boring but when you go up at 5:15 every morning and get home at seven all week you don't have the energy to do very much, BUT to dress up :) hahah yeey how's my 70ties outfit hah

It's finally Friday :)
Good morning! The week has gone so fast, I like it :) I have done 5 weeks in school now which feels really good as I want it to be over so I can start working :) Since I quit dairy (after going on the paleo diet) I haven't been drinking much tea or coffe. Well some green tea and herbal tea. But I tried putting coconut milk in my black tea the other day and it tasted so good. Because of the high fat content it gets that creamy taste that u get from dairy even if the taste is slightly different. It tastes much better than soy milk or almond milk for example and its a lot better for you. I need to get decaf tea though but I can't find it :( Here is my brekkie as well. Jam packed with goodness paleo diet style :)

Had such a good weekend :)
It's Tuesday today, probably the slowest day of the week. But I will get a facial today in school so I'm not gonna complain to much 😜 haha :) I had such a great weekend. My hole body is aching from running on Saturday an climbing on Sunday. Love it! Here is some pics from the weekend. I also did some shopping yesterday

Klätterdomen bouldering today was so much fun
Hiya!
Today i went bouldering with my siblings at klätterdomen in Gothenburg. The reason i was only bouldering is that in sweden you need a permit to top rope and tradclimb and i don't have one :( I might sort myself one out when i have time but thats not very often nowadays. Anyway, we had so much fun and i havent done much climbing for 5 months so it was about time. My arms are well tiered now so i got a good workout. Yes burned some calories hopefully haha. I need a climbing buddy! Klätterdomen was over my expectations, its so nice and have really cool climbs :)

Hello lemon Good morning vitamin C
Good morning!
It's so misty outside you can't see a thing haha its spooky. I am starting my morning as usuall with a lemon + vitamin C drink. It's very refreshing and gives you a energy boost. After that I make myself a nice brekkie. Today I had omelet, paleo style of course, with stewed (in coconut milk haha) mushrooms, onion and spinach :)
Me and the girls in class are heaving a girls/taco night tonight it's going to be so much fun :)

What to treat yourself on a Saturday paleo style ;)
I really love desserts. Who doesn't? ;) I normally experiment on the weekends trying to compose different desserts and flavours. Off course they're all made accordingly to the paleo diet. I actually use even less sweet ingredients for my desserts than for traditional paleo desserts. One of the main ingredients I use when making my sweets is coconut cream as its very versatile and substitutes dairy. Today I made blueberry coconut ice cream paleo diet style. No added sweeteners only the sweetness from the blueberries.
It tastes brilliant and really takes away your sugar cravings because its high in good fats. :)

Swedish crayfish party
After a looong day in school I'm now relaxing with my family and we are heaving a crayfish party, it's a very old Swedish tradition :) we eat crayfish and drink snaps hehe so nice :) perfect party food for me as well, no carbs but oh so good haha

Autumn is nearly here
Good morning! 🐌🍁🍂🍄🌾☔
I'm sat on the train on my way to school. Looking out the leaves on the trees is starting to go yellow. I will miss the summer but autumn is cosy in its own way as well :) autumn symbolises new starts for me. I have started a new career path to become a beauty therapist and I love it. School is so hard but it's still a lot of fun.

Saturday cosy in front of computer
Starting to update again after a blogbreak. Not that i really got into last time but i love blogging so i will give it another go =)
Since its saturday I wanted to have something sweet so I made paleo chocolate mousse. Its so simple to make. All u need is:
coconut cream whipped
cacao powder raw
maybe a little cinamon
whip it together and put it in the refrigerator and eat it really chilled
It tastes so good and no carbs to talk about weey like bounty mousse =) Im gonna continue to listen to italian rap now and do some studying before i go to sleep. Biked 10 k this morning (pat on my shoulder from myself) untz

Bad updating
Yep havent updated for a while. I landed a new job so i have been sooo busy working but im gonna go all in with my blog very soon. Its quite a lot going on at the moment and will be for a while but im very excited! ok se yus soon! x
